Hop City Maple is a small, family owned farm located in Ballston Spa, NY. John & Emilia Medicik, along with their 3 children, launched Hop City Maple in Fall of 2021. They follow strict sustainability practices in order to be good stewards of the trees they tap & place a high value on family- whether that be their kids, family, friends or customers! It is a time for celebration, reflection & giving thanks. People around the world and through time have celebrated the harvest with dances, feasts, artwork, architecture and pageantry.
